A chilled breakfast for one!


Okay so after much deliberation and a nudge from a friend I finally decided to post a recipe about what I eat for breakfast.

Most people don’t know this but I am lactose intolerant and it’s gotten worse over the past two years. That being said I had to cut out cereals over time. It sucks. I know. Imagine how I feel whenever I see a cheese board but on the upside, this has helped me discover chia seeds.

I’ve done a bit of research on them and have found that they are a great source of Omega-3 fatty acids, fibre, protein, calcium and anti-oxidants.

They are a great addition to any diet and are quite filling! Plus you can add these bad boys into any smoothie you make; in a soup as a thickener or even in your yogurt.


So here’s the recipe for the Almond Chia Breakfast pudding that I make almost every week.


6 tbsp Nature’s Choice Chia seeds

250 ml almond milk

2 tsp honey

Canned peaches (optional)

Mason jar


  1. Slice the peaches and place in the fridge for later.
  2. Combine the seeds and milk in a bowl
  3. Sweeten the mixture with the honey and stir to mix
  4. Pour mixture into a mason jar or glass container and place in the refrigerator for at least 6 hours or overnight.
  5. Once set, stir the pudding (it’s very important to stir it before serving) and serve either in the jar or in a bowl or glassware of choice
  6. Top with the chilled peaches and voila that’s breakfast!

Leftovers can keep for up to four or five days in the refrigerator.

The recipe is quite simple and all you have to do is leave the pudding overnight to set and you will have a quick ‘n easy breakfast in the morning!

You can add whichever toppings you prefer, like chopped nuts, granola, bananas or frozen berries.

I sometimes use coconut milk {that’s if I run out of almond milk} which goes well with the nutty taste of the chia seeds. So don’t worry if you can’t get your hands on the almond milk!
